Service styles

Family style ($185–$280 per guest) feels generous and communal. Plated ($210–$350) is elegant and controls timing precisely. Stations ($150–$250) suit a party-forward evening but need double the floor space.

Menu by season

Spring: asparagus, peas, halibut, lamb. Summer: heirloom tomatoes, stone fruit, grilled corn, salmon. Autumn: squash, mushrooms, short rib, figs. Winter: chicories, citrus, braises, root vegetables.

Wine

Serving local is meaningful and often cheaper. Many venues allow you to buy directly from neighbouring producers with a corkage fee — budget one bottle per two guests for a four-hour reception.
